In Arlington there's a fabulous restaurant called Za which does pretty much only salad and pizza (and dessert), which might sound boring, but they use incredibly fresh, local ingredients wherever possible, in inventive, delicious combinations. I especially love their beet salad; so much so that I recently attempted to replicate it at home, with respectable results, if I do say so myself.
I know you're going to say that you hate beets, but have you really tried them? I mean real beets, not canned beets or pickled beets. They are sweet and flavorful, and they're good for you, too. I especially like them roasted, in salads, but they're also great in soups, of course, or grated and sauteed with scallions and then topped with sour cream.
